

Buttermilk Pumpkin Biscuits (Recipe adapted from Country Living and Always with Butter)
- 4 cups all-purpose flour
- 2 1/2 tablespoons baking powder
- 2 teaspoons salt
- 1 cup (2 sticks) unsalted butter, chilled
- 1 1/2 cups pumpkin purée
- 1 tablespoon honey
- 1/2 cup buttermilk
Preheat oven to 400 degrees F. Combine flour, baking powder, salt together in a large bowl. Cut the chilled butter into the flour mixture until it is all worked in and resembles crumbles. In a separate small bowl mix the pumpkin puree and honey. Add the pumpkin mixture to the flour mixture and combine. Add buttermilk and work until just holds together. Knead dough until it stays together and roll out to be 3/4 inches thick. Cut biscuits using a biscuit cutter or a glass and place on a baking sheet with parchment paper. Cook in oven for 20-25 minutes. Remove from oven, allow to cool and enjoy!
