Day 15: Pumpkin Spiced Cream Cheese Brownies

Pumpkin Spiced Cream Cheese Brownies, yeah, we just went there. Go big or go home, right? It's Day 15 people! We're half way through with our 31 Days of Pumpkin! We had to celebrate big with these brownies and for the record, this might be my favorite brownie recipe to date. These moist brownies explode with flavor and the creamy texture of the spiced cream cheese on top is sinful. It's like a brownie and cheesecake had a Fall flavored love child. I had to physically restrain myself from eating the whole pan. I almost resorted to feeding it all to the dog so it wouldn't end up totally gone in an hour (don't worry animal lovers, I didn't, chocolate and dogs, I know, I know).

These brownies went from sinful to plain illegal once I topped them with a sweet pumpkin spice whipped cream. Wow. That's all I can say. But enough of what I have to say, I'll let these little guys speak for themselves.

Pumpkin Spiced Cream Cheese Brownies - Makes 16 brownies

  • 1 (16-20 oz) box brownie mix

  • 1/2 cup pumpkin puree

  • 1/3 cup vegetable oil

  • 2 eggs

  • 2 tablespoons water

For the cream cheese topping:

  • 8 oz cream cheese

  • 1/2 cup pumpkin puree

  • 1/4 cup sugar

  • 1 1/2 teaspoons pumpkin pie spice

Preheat oven to 350. Grease an 9 x 13 dish or 2 smaller 8" pans. Mix the brownie box mix, pumpkin puree, and oil together. After fully incorporated add the egg and water. Pour into baking dish. In a new bowl mix cream cheese, pumpkin puree, sugar, and pumpkin pie spice. Drop dollops of cream cheese mixture onto the brownie batter and swirl together with a knife. Bake 30-35 minutes. Cool and serve.

For whipped topping:

I whipped together heavy cream and added 1/2 tsp of pumpkin pie spice and sugar to taste.
