Day 19: Pumpkin Fries

Hold onto your hats because we actually have something savory to share with you today. There's only so much sweet a girl can take and even though we've yet to hit our max (not sure we ever will), we thought it would be nice to change things up and show a very simple savory application of pumpkin. Pumpkin fries! I know, it sounds crazy, but they are delicious and way better for you than their fried friend the potato. These baked cuties are the perfect to be eaten with a burger, a steak, or even on their own. I still dip them in ketchup, because anything that claims to be a french fry needs to go well with ketchup. Don't worry, they were made for ketchup! As far as seasoning goes they are delicious with just salt and pepper, but I prefer mine with just a sprinkle of cumin. But you can really season them how you please, which is another reason I love these fries!

Pumpkin Fries - Makes 2 servings

  • 1 small pumpkin (pie pumpkin is ideal)

  • Olive oil

  • Salt

  • Pepper

  • Any other seasoning you please: garlic, red pepper flakes, cumin, fennel...whatever you are in the mood for!

Preheat oven to 400 degrees. Cut pumpkin in half, seed it, and scrape it out with a spoon. Remove skin. Cut pumpkin into uniform pieces and put into a bowl. Drizzle lightly with olive oil and toss together with salt, pepper, and whatever else you please. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes. Remove from oven, flip fries over and cook on the other side for another 20 minutes or until golden brown.
