Day 2: Pumpkin Pie Oatmeal

Breakfast is our second favorite meal of the day (obviously dessert comes first!) at the Dessert Pocket. It is so versatile. Sweet, savory, hot, cold, crunchy, or smooth - breakfast can be whatever you want it to be. When I'm not eating pancakes, donuts, muffins, waffles, or stuffed french toast (which is not as often as I'd like) I am eating cereal or oatmeal. I probably eat oatmeal 5 days a week during the Fall and Winter. Oatmeal takes on any flavor you add to it, which can perfectly suit the mood I am in. If it's a "I'm not going to work, I'm too tired" morning I might add a little nutella or peanut butter to my oatmeal. But if it is a "I can't fit in my skinny jeans" morning, I'll add vanilla soy milk and fresh fruit. But one flavor oatmeal is a staple in my house once the leaves change and it becomes Fall. That is Pumpkin Pie Oatmeal. It is rich, warm, hearty and everything I look for in a breakfast on a brisk Fall morning.There is just something about this oatmeal, I cannot get enough. I am very picky about how I make it. I prefer to not use quick cooking oats. I like the texture more of rolled oats, steel cut, or classic. Quick cooking coats are great in a pinch, but I prefer the ritual of cooking my oatmeal over the stove. The smell this recipe wafts through the house is worth cleaning the pan for, believe me. It does takes longer than the microwave version but it tastes as rich and decadent as pumpkin pie. And any day I can eat dessert for breakfast is a good day.

Pumpkin Pie Oatmeal Recipe - 2 Servings

  • 1 cup classic oats

  • 1 1/2 cup whole milk plus a splash for finishing (all other varieties acceptable, I just like the creaminess of whole milk)

  • 1/2 cup canned pumpkin

  • 1/2 tsp pumpkin pie seasoning

  • 1 tbsp dark brown sugar plus a sprinkle for the top

  • A pinch of salt


Start by adding milk and pumpkin to a saucepan. Stir until the milk and pumpkin mixture boils. Once boiling add pumpkin pie seasoning, salt, and oats. Turn heat down to medium or low and continue stirring until oats have cooked all the way through (around 5 minutes). Mixture will thicken up and cook the coats during this time. At the very end I remove pan from heat and add a slash or two of milk (this depends on the consistency you like your oatmeal). Serve in a bowl with brown sugar sprinkled on top and enjoy!
