Day 31: Mini Oreo Pumpkin Cheesecakes

Wow, I can't believe that today is finally here. We've officially made it through 31 Days of Pumpkin Recipes!!!

Now that I'm done patting myself on the back let's get down to business, today's recipe, Mini Oreo Pumpkin Cheesecakes. Many of you have been requesting a cheesecake recipe for the past few weeks so we knew that when the time came, it couldn't be any old cheesecake recipe, it had to be something special. As soon as I saw this recipe I knew it was the one. It only requires a few ingredients and is easy to follow. Plus it's black and orange, how appropriate for Halloween! My co-workers have also been harassing me about brining in one of my many pumpkin creations and these mini cheesecakes are easy to transport and assemble at work, adding the whip cream and sprinkles before serving.

{Mini Oreo Pumpkin Cheesecakes}

  • 2 8-ounce packages of cream cheese, softened
  • 1/2 cup granulated white sugar
  • 2 eggs
  • 2 tbsp sour cream
  • 1 tsp vanilla
  • 1/2 cup pumpkin puree
  • 2 packages of oreos
  • whipped cream
  • sprinkles
  1. Preheat oven to 350 degrees
  2. Place 24 liners in a muffin pan
  3. In a large bowl, beat the cream cheese until creamy. Add the sugar and beat again. Next, add the eggs, one at a time, beating after each addition. Finally, add the sour cream, vanilla, and pumpkin puree, and beat until combined.
  4. In each cup, place a whole oreo. Fill the cups 3/4 full with the batter. Then, push another whole oreo onto the top of the batter.
  5. Bake for 20 minutes
  6. Cool in pan for 15-20 minutes before removing and placing on a wire rack to finish cooling.
  7. Keep refrigerated. Top with whipped cream and sprinkles before serving, enjoy!
