Eggs are no joke to me. Preparing them right is a serious art. From poached to fried, soft boiled or scrambled, I do not mess around with how my eggs get prepared. When the yolk is whole, there is a perfect balance where the whites are cooked throughout but the yolk is still runny and creamy in the center. When the yolk is scrambled it's a totally different story. Scrambled eggs go from creamy and fluffy to dry and rubbery in less than 4 seconds. You don't have a visual guide as much as say a fried egg, where you can see when it's overcooked almost immediately. That is why, the perfect scrambled egg is an art form. Patience is key. Patience, butter, and a slightly time consuming on the burner-off the burner maneuver that will revolutionize your breakfast. Trust me on this one, you won't regret it.

- Crème Fraîche, Sour Cream, or Cream Cheese
- Salt & Pepper
- Optional: Chives to garnish
